  • 2 large cucumbers, peeled and roughly chopped
  • 1 small sweet onion, peeled and quartered
  • 1 green bell pepper, cored and chopped
  • 2 cloves garlic
  • 1/2 cup fresh parsley
  • 1/4 cup fresh basil leaves
  • 2 tablespoons white wine vinegar
  • 1/4 cup olive oil, plus extra for drizzling
  • Salt and freshly ground black pepper, to taste
  • 1 cup cold water, adjust as needed
  • Ice cubes, for serving


Preparing the Vegetables:

  1. Prepare the Cucumbers: Start by peeling and roughly chopping the cucumbers. The aim is not precision but ensuring the pieces are small enough to blend smoothly.
  2. Chop the Bell Pepper and Onion: Core the green bell pepper and quarter the sweet onion.
  3. Prepare the Garlic and Herbs: Peel the garlic cloves and gather the fresh parsley and basil leaves.

Blending the Gazpacho:
